Eating

Food Specialties
Cuisine in FYROM uses a variety of natural and healthy fresh products. Fruits and vegetables are cultivated using very natural procedures. The country's several lakes and rivers provide excellent sweet water fish, such as the Ohrid trout. Meats are usually prepared grilled, served with "kaakaval", a yellow cheese from the Gouda group. The "Chopska" is a cheese served shredded over traditional country-style salads.

The population prepare varieties of cooked peppers (sweet and green), called "Piperki", which are used in stuffing combined with rice or meats. These peppers are largely consumed as basic ingredients in their cuisine.

Drinks
The most popular drinks are the "Mastika" and the "Iolta".  These two alcoholic beverages are obtained from the fermentation of grapes, the first one, Mastika, is mixed with lentisk which adds an anise-flavored taste, similar to the Ouzo liqueur from Greece.  Iolta, which means "yellow", is distinguished by its particular color, obtained from the contact with the mulberry wooden barrels where it has been stored.  It is at the moment  when the main course is served, that the choice of wine must be made, selecting it from the local wine list (red or white).  Most of the wines come from the Tikve region, in the southern part of the country.  The T'ga za Jug is a full-bodied red wine, popular and flavorsome, the Alexandria is slightly more delicate.  Wines produced by the Bovin and Skovin cellars are well appreciated by the amateurs.
